Cleaning & Sanitizing for Allergens
Sanitizing keeps pathogens in check, but allergen safety depends on something different: physically removing the allergen residue from surfaces, tools, and hands. This chapter explains why cleaning — not just sanitizing — is the allergen control, and the correct sequence to follow.
Cleaning removes; sanitizing reduces microbes
A sanitizer is designed to reduce pathogens to safe levels. It does not reliably remove or destroy allergen proteins. Only physical cleaning — washing with detergent and water to lift and rinse away the residue — actually removes an allergen from a surface. That is why, for allergens, the emphasis is on genuine removal of residue, and why a quick spray of sanitizer on a dirty surface is not enough to make it safe for an allergen-free order.
The correct sequence
For equipment used with an allergen, follow wash, rinse, sanitize, then air dry. Washing with detergent removes the allergen protein; rinsing clears the detergent; sanitizing reduces pathogens; and air drying avoids re-introducing residue from a shared towel. Skipping the wash step, or sanitizing without washing first, leaves allergen residue behind. Air drying (rather than towel drying) prevents a cloth from carrying allergen or contaminants back onto the clean surface.
Tools, cloths, and gloves
Single-use disposable towels are the safest way to wipe up an allergen spill because they are discarded after one use and cannot carry residue elsewhere. Shared wiping cloths and reused towels spread allergen protein from station to station, and sponges trap residue a rinse won't remove. Gloves and hands are cross-contact routes too: wash hands and put on a fresh pair of clean gloves before an allergen-free order, and change them whenever you switch tasks.
