Preventing Cross-Contact

The most common way an allergic guest is harmed in a restaurant is not a mislabeled ingredient but cross-contact: a trace of an allergen carried onto a dish that should have been safe. This chapter defines cross-contact, separates it from cross-contamination, and lays out how to build an allergen-free order that stays allergen-free.

What cross-contact is — and why heat won't fix it

Cross-contact is the transfer of an allergen protein from one food, surface, utensil, glove, or hand onto another food. It differs from cross-contamination, a term usually reserved for the transfer of pathogens. The crucial point for allergens is that cooking does NOT destroy allergen proteins — a hot fryer, grill, or oven will not 'cook out' the allergen. Because even a trace can trigger a reaction, the only reliable control is keeping the allergen away from the order in the first place.

Shared equipment and surfaces

Common cross-contact routes include shared fryer oil, shared grills and cutting boards, common utensils and pans, splatter and spills, and hands or gloves that touched an allergen. A fryer that just cooked breaded shrimp will transfer shellfish protein to the next basket of fries. A knife used on a wheat roll will carry wheat protein to the next item. Preventing this means dedicated or freshly cleaned equipment, clean utensils, and separated prep space for allergen-free orders.

Building a safe order

To prepare an allergen-free order safely: wash your hands and put on clean gloves, use freshly cleaned and sanitized equipment and clean utensils, prepare the item in a separated space away from the allergen, and communicate the allergy to the whole team so everyone protects the ticket. Store allergen-free ingredients away from allergen-containing ones. Never rely on rinsing, wiping with a shared cloth, or picking a visible allergen off a finished plate — none of these removes the protein.
