Introduction

Cross-contamination is when germs move from one place — usually raw food, dirty hands, or an unclean surface — onto food that is ready to eat. It is one of the biggest causes of foodborne illness, and it happens in an instant: the same knife on raw chicken and then on lettuce, the same cutting board, the same unwashed hands. This chapter shows you how germs travel and the simple habits that stop them. It also covers food allergens — a different kind of contamination that can put a customer in the hospital from a trace amount most people would never notice.

How cross-contamination happens — and how to stop it

Germs move by contact. Anything that touches raw food can carry raw-food germs to the next thing it touches. The three main pathways:

  1. Food to food — raw meat juices dripping onto food below it in the cooler; raw and ready-to-eat foods stored or prepped together.
  2. Hands to food — you touch raw chicken, then a bun, without washing.
  3. Equipment to food — a cutting board, knife, slicer, or thermometer used on raw food and then on ready-to-eat food without cleaning and sanitizing in between.

The four ways to prevent it

1. Separate raw from ready-to-eat. Keep raw meat, poultry, and seafood away from ready-to-eat food at every step — during storage, prep, and display. Use separate cutting boards and utensils, or clean and sanitize between uses. Many kitchens use color-coded cutting boards (for example, red for raw meat, green for produce) so nobody mixes them up — though the exact colors are set by the operation, not by law.

2. Store food in the right order (top to bottom by cook temperature). In a cooler, the food that needs the highest cooking temperature goes on the bottom, so its juices can never drip onto food that will be cooked less (or not at all). From top to bottom:

  • Top: ready-to-eat food
  • Seafood (cook to 145°F)
  • Whole cuts of beef and pork (145°F)
  • Ground meat and ground fish (155°F)
  • Bottom: whole and ground poultry (165°F)

The memory hook: the higher the required cooking temperature, the lower it sits. Raw chicken, which needs the hottest cook (165°F), always goes on the bottom shelf.

3. Clean and sanitize between tasks. Any surface, board, knife, or thermometer that touched raw food must be washed, rinsed, and sanitized before it touches ready-to-eat food (Chapter 6). When in doubt, clean it.

4. Wash your hands and change gloves when switching from raw to ready-to-eat food (Chapter 2).

Food allergens — small amounts, big danger

A food allergy is when a person's immune system reacts to a specific food protein. For someone with a serious allergy, even a tiny trace — a smear of peanut on a "clean" knife, a splash of milk in a supposedly dairy-free dish — can cause a reaction ranging from hives to anaphylaxis, a life-threatening emergency that closes the airway. This is why allergen control is treated as its own kind of contamination.

The major food allergens ("the Big 9")

U.S. law requires these nine major food allergens to be declared on packaged food. Sesame was added as the ninth on January 1, 2023. Know them:

  1. Milk
  2. Eggs
  3. Fish
  4. Shellfish (crustaceans — shrimp, crab, lobster)
  5. Tree nuts (almonds, walnuts, cashews, etc.)
  6. Peanuts
  7. Wheat
  8. Soybeans
  9. Sesame

These few foods cause the large majority of serious allergic reactions.

What a food handler must do about allergens

  • Take allergy requests seriously — every time. If a customer says they have an allergy, treat it as real and potentially life-threatening. Do not guess about ingredients.
  • Tell your manager or chef. They know the recipes and can confirm what is in a dish and whether it can be made safely. Never assume.
  • Prevent allergen cross-contact. This is like cross-contamination, but with allergens: an allergen must not get onto an allergen-free order. Use clean, sanitized equipment, utensils, gloves, and surfaces; use fresh ingredients from unopened containers where needed; and prepare the allergen-free order separately. A "clean-looking" fry oil that fried breaded (wheat) food still carries wheat; the same tongs that plated a cheese dish still carry milk.
  • Never scrape the allergen off. Picking the nuts off a salad or the cheese off a burger does not make it safe — the protein is already in the food. It has to be remade.
  • Know your dish. Be able to point the customer to accurate ingredient information, or get someone who has it. Guessing can kill.

Storage order follows the required cooking temperatures in the FDA Food Code (2022) §3-401.11 and the storage rule in §3-302.11. The nine major allergens are set by the FALCPA and the FASTER Act (sesame, effective Jan. 1, 2023).

Worked scenario

The situation. A line cook grills a chicken breast on the flat-top, then uses the same tongs and the same cutting board — without cleaning them — to slice a fresh avocado for a customer's salad. Ten minutes later, a second customer orders a peanut-free pad thai; the cook makes it in the same wok that just made a peanut dish, giving it a quick wipe with a side towel first.

What went wrong? Two separate problems. First, cross-contamination: raw-chicken germs on the tongs and board were carried straight onto the ready-to-eat avocado, which will not be cooked. Second, allergen cross-contact: a quick wipe with a towel does not remove peanut protein from the wok, so the "peanut-free" dish is not actually peanut-free — a potentially deadly mistake for an allergic customer.

The right move. For the avocado: use a clean, sanitized knife and board (or a different set kept for produce), not the ones that touched raw chicken. For the pad thai: the wok, utensils, and cooking surface must be fully washed, rinsed, and sanitized, and fresh ingredients used, before making the peanut-free order — and the cook should confirm with the manager that the recipe truly contains no peanut ingredients.

Common mistakes to avoid

  • One knife, one board, everything. Using the same unwashed knife or board for raw meat and then produce is the textbook cross-contamination error.
  • Storing raw chicken above the salad. Raw poultry belongs on the bottom shelf. Anything stored above ready-to-eat food risks dripping onto it.
  • Treating an allergy like a preference. "No nuts" from an allergic customer is a medical requirement, not a taste choice. A trace can send someone to the ER.
  • Scraping instead of remaking. Removing the visible allergen leaves the protein behind. The order must be made fresh.
  • Trusting a quick wipe. A side towel or a rinse does not sanitize. Equipment that touched raw food or an allergen must be properly cleaned and sanitized.
  • Guessing about ingredients. If you are not certain, ask the person who knows. Never reassure a customer based on a guess.
